Grilled Lamb Heart Gyro-Style Wraps

Ingredients:

  • 1 lamb heart, cleaned and trimmed
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground coriander
  • Salt and pepper to taste
  • 4 small pita bread or flatbreads
  • Optional toppings: chopped parsley, diced tomatoes, sliced cucumbers, yogurt sauce

Instructions:

  • Preheat your grill or grill pan over medium-high heat.
  • Slice the lamb heart into thin strips, against the grain.
  • In a large bowl, combine olive oil, chopped onion, minced garlic, ground cumin, smoked paprika, ground coriander, salt, and pepper. Mix well.
  • Add the lamb heart strips to the bowl and toss until evenly coated with the spice mixture.
  • Thread the seasoned lamb heart strips onto skewers.
  • Place the skewers on the preheated grill or grill pan and cook for about 3-4 minutes on each side, or until the lamb is cooked to your desired level of doneness.
  • While the lamb is cooking, warm the pita bread or flatbreads on the grill for about 1-2 minutes on each side.
  • Once the lamb is cooked, remove it from the skewers and divide it evenly among the warmed pita bread or flatbreads.
  • Top with optional toppings such as chopped parsley, diced tomatoes, sliced cucumbers, and yogurt sauce.
