  • 1 lb beef chorizo
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 4 large eggs
  • Salt and pepper to taste
  • 4 small flour tortillas
  • Optional toppings: shredded cheese, chopped cilantro, avocado slices, salsa
