Italian Sausage and Pepper Sandwiches

  • 4 Italian sausage links
  • 2 tablespoons olive oil
  • 1 onion, thinly sliced
  • 2 bell peppers (red, green, or yellow), thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 4 hoagie rolls
  • Optional toppings: sliced provolone cheese, marinara sauce, hot peppers


  • Preheat your grill or grill pan over medium-high heat.
  • Grill the Italian sausage links until cooked through, about 15-20 minutes, turning occasionally to ensure even cooking. Remove from heat and set aside.
  • In a large skillet, heat olive oil over medium heat. Add thinly sliced onion and bell peppers to the skillet and cook until softened and slightly caramelized, about 8-10 minutes.
  • Add minced garlic, dried oregano, and dried basil to the skillet. Season with salt and pepper to taste. Cook for an additional 1-2 minutes until fragrant.
  • Slice the grilled Italian sausage links into bite-sized pieces and add them to the skillet with the onion and peppers. Stir to combine and heat through, about 2-3 minutes.
  • Slice the hoagie rolls in half lengthwise, without cutting all the way through.
  • Spoon the sausage and pepper mixture into each hoagie roll. Top with optional toppings such as sliced provolone cheese, marinara sauce, and hot peppers.
