INGREDIENTS
- 1 lb Rollingwood Farms Ground Pork
- 2 medium sweet potatoes, peeled and diced into small cubes
- 1 small red onion, diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 1 1/2 teaspoons Rollingwood Farms Barnburner Spicy Rub
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Optional: 4 eggs (fried or poached for serving)
- Optional garnish: Fresh cilantro or green onions, chopped
INSTRUCTIONS
Cook the Sweet Potatoes:
- Heat half of the olive oil in a large skillet over medium heat.
- Add the diced sweet potatoes and cook for 6-8 minutes, stirring occasionally, until they begin to soften.
- Remove the sweet potatoes from the skillet and set aside.
Cook the Pork:
- In the same skillet, add the remaining olive oil.
- Add the ground pork and cook, breaking it into crumbles, until browned, about 5-7 minutes.
- Sprinkle the pork with the Barnburner Spicy Rub and stir to combine.
Add Vegetables and Combine:
- Add the diced onion, bell pepper, and garlic to the skillet with the ground pork.
- Cook for 3-4 minutes until the vegetables are softened.
- Return the sweet potatoes to the skillet and stir everything together. Cook for another 3-4 minutes, allowing the flavors to meld. Season with salt and pepper to taste.
Optional Egg Topping:
- If using eggs, fry or poach them while the hash finishes cooking.

- Plate the hash and top with an egg for added richness if desired.
