INGREDIENTS

  • 1 lb Rollingwood Farms Ground Pork
  • 2 medium sweet potatoes, peeled and diced into small cubes
  • 1 small red onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 1/2 teaspoons Rollingwood Farms Barnburner Spicy Rub
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Optional: 4 eggs (fried or poached for serving)
  • Optional garnish: Fresh cilantro or green onions, chopped

INSTRUCTIONS

Cook the Sweet Potatoes:

  • Heat half of the olive oil in a large skillet over medium heat.
  • Add the diced sweet potatoes and cook for 6-8 minutes, stirring occasionally, until they begin to soften.
  • Remove the sweet potatoes from the skillet and set aside.

Cook the Pork:

  • In the same skillet, add the remaining olive oil.
  • Add the ground pork and cook, breaking it into crumbles, until browned, about 5-7 minutes.
  • Sprinkle the pork with the Barnburner Spicy Rub and stir to combine.

Add Vegetables and Combine:

  • Add the diced onion, bell pepper, and garlic to the skillet with the ground pork.
  • Cook for 3-4 minutes until the vegetables are softened.
  • Return the sweet potatoes to the skillet and stir everything together. Cook for another 3-4 minutes, allowing the flavors to meld. Season with salt and pepper to taste.

Optional Egg Topping:

  • If using eggs, fry or poach them while the hash finishes cooking.
