INGREDIENTS

For the Stew:

  • 1 pack of Rollingwood Farms Mild Italian Sausages (4-5 sausages)
  • 1 lb Yukon Gold potatoes, diced
  • 2 carrots, sliced
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 can (14 oz) diced tomatoes
  • 1 tablespoon olive oil
  • 1 teaspoon Rollingwood Farms Barnburner Spicy Rub
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Salt and pepper, to taste

Optional Garnish:

  • Fresh parsley, chopped
  • Grated Parmesan cheese

INSTRUCTIONS

Prepare the Sausages:

  • Heat a large pot or Dutch oven over medium heat. Add the sausages and cook until browned on all sides, about 4-5 minutes. Remove from the pot and set aside (they don’t need to be fully cooked yet).

Sauté the Vegetables:

  • In the same pot, add olive oil, onion, carrots, and garlic. Sauté for 3-4 minutes, or until the vegetables begin to soften.

Build the Stew:

  • Add the diced potatoes, chicken broth, diced tomatoes, Barnburner Spicy Rub, oregano, thyme, salt, and pepper. Stir to combine.
  • Return the sausages to the pot, nestling them into the stew.

Simmer:

  • Bring the stew to a boil, then reduce the heat to low. Cover and let it simmer for 25-30 minutes, or until the potatoes are tender and the sausages are cooked through.

Finish:

  • Remove the sausages from the pot and slice them into bite-sized pieces. Return the sausage slices to the stew and stir to distribute evenly.
  • Taste and adjust seasoning as needed.
